Easy holiday recipes from someone who only cooks when it's easy!

Disclaimer-- I typed this about 2am and my 2am typing isn't what it is at 2pm --: )

Hi everyone and Happy Holidays. I admit it -- one of my favorite parts of the holidays is eating! I love love love the food and flavors. I even love the Starbucks coffee cups. I can't help it. Somehow, those cups make my coffee taste better. That said, the cook/baker in me was lost during my many corporate years when I worked 80 hour weeks and traveled all the time. Now, I write write write, and tend to be so lost in my fictional world, its hard to find time to cook. Besides, after so many years away from the kitchen the part of me that use to actually like cooking seems fictional as well. Back in those corporate days I mentioned, one of my large Dallas clients was the Mary Kay Cosmetic corporate office. I remember touring the Mary Kay museum, and yes there is a HUGE Mary Kay museum, and hearing the famous Mary Kay saying -- FAKE IT UNTIL YOU MAKE IT. Well, here's how I FAKE IT to MAKE IT...in the kitchen:)


For the kids -- this is so fun and easy. My kids LOVED doing this.

OREO PIE



Get a deep glass bowl or pan. Then have the kiddos put whipped cream on the bottom. If you use the spray kind they have the most fun. Then layer Oreo cookies on top. Repeat. Do this for at least 7 layers. Then put in the fridge overnight. Simple. When you wake up the Oreo cookies will have softened into the whipped cream and its just like a real pie. It's good! And the kids made it with you. This is great for young kids. It's just so easy.


Jalapeno Corn




Two cans of corn, one can of green chilis, shredded yellow cheese, and a stick of cream cheese. Heat on stove and melt cream cheese then pour into baking pan and sprinkle some shredded cheese on top. Bake until cheese is hot and bubbly. Yummy, creamy, and spicy. A lot of people use actual Jalapenos for this dish but if you use the chopped chilis (you can buy these in the same section of the store as the canned jalapenos) you get a much better flavor that seems to appeal to more people.


Queso



I was shocked when I moved to the east coast and the store attendants looked at me like I was nuts when I wanted to know where the Ro-tel and Velveeta. WHAT? Velveeta and Ro-tel are like eggs and milk in Texas. Everyone has them.

So this recipe is soooo simple. You need a half a block of Velveeta, a can of Ro-tel tomatoes, and a microwave and you will have the best darn queso you can make at home. And the low-fat Velveeta tastes just as good with the Ro-tel.


You can get Ro-tel in most stores -- either in with the canned tomatoes or with the Mexican food. It's stocked in most of east coast stores as Mexican. It's so common in the south that it's usually with tomatoes.




So now you know how I FAKE IT to MAKE IT.

And you know I have to remind you --- Michael is coming in May 2011!!!

  8. LOL Grace -- its Damion keeping me awake now from book 3. Robin I hope the girl's enjoy making it if you do try it. I see everyone likes that easy pie idea. The best thing is how fun it is with the kids. They really feel involved. And thanks on Michael and the cover everyone. I can't wait for MAY! But now I wait nervously for the reviews. I know you all know how that goes:)
